Quinoa with Vegetables

Ingredients

1.5 cups Quinoa 

2 cups Vegetable Broth

1 whole Red bell pepper

1 can of 15 oz Corn

1 Cup Kale

2-3 minced cloves Garlic

1 dice White Onion

1 tbs Dash Seasoning

1 tsp Turmeric

Instructions

  1. Cook the quinoa accoriding to the package instruction but instead of water use the vegetable broth instead of water.

  2. Cut 2-3 cloves of garlic and half of an onion into small cubes.

  3. Thinly cut the red bell pepper and kale, set aside.

  4. Heat a sauté pan with 2 tablespoons of olive oil, then sauté the garlic and
    onion until soft and fragrant.

  5. Add the cut red bell pepper, kale, and a can of corn to the pan. Sauté for 5-8 minutes, ensuring the vegetables do not burn.

  6. Take the cooked quinoa and add it to the sauté pan. Sprinkle 1 teaspoon of turmeric and 1 tablespoon of Dash seasoning.

  7. Sauté for another 3 minutes, ensuring the ingredients are well mixed.

  8. Season with salt and pepper to taste.
