Ingredients

1 Eggplant, cut into 1/2 inch slices

2 tsp Sea salt / Kosher salt

1 cup All-purpose flour

1 cup Milk or Soy Milk

1 cup Breadcrumbs

1/4 cup Olive oil, extra virgen

Instructions

  1. Preheat the oven to 350 degrees F

  2. Line a baking sheet with parchment paper

  3. Place eggplant slices on a cutting board and sprinkle them with sea salt

  4. Put flour in a shallow bowl or plate

  5. Pour milk in a separate shallow bowl or plate

  6. Place breadcrumbs in another shallow bowl or plate

  7. Dip each eggplant slice first in the flour, then in the milk, and finally in the breadcrumbs

  8. Arrange the breaded eggplant slices on the baking sheet

  9. Drizzle each eggplant slice with olive oil

  10. Bake for 25 - 30 minutes or until the slices are golden brown and crispy

  11. Serve hot and enjoy!
