Ingredients

1 pound Ground beef

1 tsp Sea salt / Kosher salt

2 cloves Garlic, minced

2 Eggs

1/2 cup Breadcrumbs

1 Onion, diced

2 Carrots, diced

2 Stalks celery, diced

4 cups Vegetable broth

2 tbs Olive oil

Instructions

  1. In a large bowl, combine ground beef, sea salt, minced garlic, eggs, and breadcrumbs.

  2. Mix until all ingredients are well combined.

  3. Using your hands, form the mixture into mini meatballs.

  4. Heat the olive oil in a large pot over medium heat.

  5. Add the diced onion, sliced carrots, and sliced celery.

  6. Cook for about 7 minutes or until the vegetables are softened.

  7. Add the vegetable broth to the pot and bring it to a boil.

  8. Reduce the heat to low and add the mini meatballs to the pot.

  9. Simmer for about 20 minutes or until the meatballs are cooked through.

  10. Ladle the soup into bowls.

  11. Serve and enjoy your delicious mini meatball soup!
