Ingredients

2 medium Zucchini, sliced into 1/4- inch thick rounds

2 tsp Sea salt /Kosher salt

1/2 cup All-purpose flour

1/2 cup Milk or Soy Milk

1/2 cup Breadcrumbs

3 tbs Olive oil

Instructions

  1. Preheat the oven to 350 degrees F

  2. Line a baking sheet with parchment paper

  3. Put flour in a shallow bowl or plate

  4. Pour milk in a separate shallow bowl or plate

  5. Place breadcrumbs in another shallow bowl or plate

  6. Dip each zucchini slice first in the flour, then in the milk, and finally in the breadcrumbs

  7. Arrange the breaded zucchini slices on the baking sheet

  8. Drizzle each zucchini slice with olive oil

  9. Bake for 25 - 30 minutes or until the slices are golden brown and crispy

  10. Serve hot and enjoy!
