Ingredients

1 1/2 cup Raw cashews, unroasted and unsalted

1 cup Green peas, frozen

1 cup Spinach leaves, packed

10 -15 leaves Basil, fresh leaves

1 clove Garlic

1/3 cup Nutritional yeast

1 tbs Lemon juice

1 1/4 cup Plant-based milk, plain and unsweetened

1 tsp Sea salt /Kosher salt

Instructions

  1. Soak the cashews in boiling water for at least 10 minutes.

  2. Drain them well and transfer to a blender.

  3. Soak the peas in hot water for 5 minutes to thaw them quickly.

  4. Drain the peas and add them to the blender.

  5. Add all the remaining ingredients to the blender.

  6. Blend on high until the mixture is smooth.

  7. Taste the sauce and adjust the seasoning with sea salt if desired.

  8. Set the sauce aside.

  9. When ready to use, heat the sauce for 3 minutes in a small pot.

  10. Toss the heated sauce with your preferred choice of vegetables, pasta, or rice.

  11. Enjoy your meal with the delicious cashew and pea sauce!"
