Ingredients
1 tbs Olive oil
3 large Carrots, diced
3 Celery stalks, diced
1/2 tsp Thyme, dried
1/2 tbs Sea salt / Kosher salt
6 cups Vegetable broth
1 can Chickpeas
8 ounces Pasta, rotini or other
Instructions
Heat olive oil in a large pot over medium-high heat.
Add diced carrots and celery to the pot.
Cook until slightly softened, about 5-7 minutes.
Add thyme to the pot.
Season with sea salt.
Sauté for another 2-3 minutes.
Add vegetable broth to the pot.
Bring the mixture to a boil.
Add chickpeas and pasta to the pot.
Reduce heat and simmer for 12-15 minutes, allowing the pasta to cook and the flavors to meld.
Once the pasta is cooked and the soup is flavorful, remove the pot from heat.
Ladle the soup into bowls.
Serve immediately and enjoy your comforting chickpea and pasta soup!
