Ingredients

2 cups Cherry tomatoes, halved

2 medium Tomatoes, cut into bite-sized wedges

2 tbs Fresh basil, thinly sliced

2 tbs Olive oil, extra-virgin

1/2 tbs Balsamic vinegar

1/2 tsp Sea salt / Kosher salt

Black pepper, freshly ground to taste

1/2 English cucumber, thinly sliced

1 Avocado, ripe sliced or diced

Instructions

  1. In a medium bowl, combine cherry tomatoes, tomato wedges, and basil.

  2. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.

  3. Pour the dressing over the tomatoes in the medium bowl and toss to coat the tomatoes in the dressing.

  4. Add cucumber and avocado to the bowl, gently tossing to combine all the ingredients.

  5. Taste the salad and adjust the seasoning with additional salt and pepper if needed.

  6. Serve the salad at room temperature or chilled.

  7. Enjoy!
