Ingredients

3 cups Pasta

1 cup Quinoa

1 box vegetable broth

Baked mushrooms - see recipe

Red Sauce 01 - see recipe

Baked tofu - see recipe

1 tbs Olive oil

Instructions

  1. Follow the instructions for baking mushrooms in a separate recipe.

  2. In a medium pot, bring 6 cups of water to a boil.

  3. Add the pasta and cook for 8-10 minutes or until al dente. Drain and set aside.

  4. Prepare quinoa according to the package directions, using vegetable broth instead of water. Set aside when cooked

  5. Follow the instructions for baking tofu in a separate recipe.

  6. Follow the instructions for making Red Sauce 01 in a separate recipe.

  7. Preheat the oven to 275 degrees F.

  8. Grease an 8x8 baking dish with olive oil.

  9. In a large bowl, combine the cooked pasta, quinoa, baked mushrooms, red sauce 01, and baked tofu.

  10. Mix until everything is evenly combined.

  11. Transfer the mixture into the greased baking dish.

  12. Bake at 275 degrees F for 25-30 minutes or until the casserole is hot.

  13. Remove from the oven.

  14. Serve the vegetarian casserole warm and enjoy!
