Ingredients

3 whole dice Tomatoes

1 whole dice Red bell pepper

1 whole dice Yellow bell pepper

1 whole dice Orange bell pepper

3 dice Carrots

1 whole dice Onion

3 1/2 cups Vegetable broth

Sea salt / Kosher salt and black pepper - to taste

2 tbs Olive oil

Instructions

  1. Preheat the oven to 350 degrees F.

  2. Line a baking sheet with parchment paper.

  3. Cut tomatoes, bell peppers, carrots, and onion into pieces.

  4. Place the vegetables onto the prepared baking sheet.

  5. Drizzle the vegetables with olive oil then season with sea salt

  6. Toss the vegetables to ensure they are coated with the oil and seasoning.

  7. Place the baking sheet in the preheated oven and roast for 20-22 minutes, stirring halfway through.

  8. Once the vegetables are cooked, remove from the oven and let them cool slightly.

  9. Place the roasted vegetables in a blender and add the vegetable broth

  10. Blend until the desired consistency is reached.

  11. Serve and enjoy your homemade roasted vegetable sauce!
